Pacific Ginger Salad
Ginger is available in several forms; fresh root ginger , preserved stem ginger in sugar syrup, crystallized ginger, dried ginger, pink Japanese pickled ginger preserve in vinegar, ground ginger and ginger wine. A typical oriental marinade, consisting of soy sauce, ginger, honey and garlic. For the Thai dipping sauce, it includes ginger, chillies, shallots, soft brown sugar and rice vinegar. To make ginger vinegar - steeping sliced ginger in rice vinegar or sherry vinegar. This is a wonderful dressings and marinades.
Scallops or crab could be used in this salad instead of the salmon and prawns.
